A premium Cuvée-Milk Chocolate from biologically cultivated Trinitario - and Criollo cocoa from the peninsula in the Dominican Republic. The chocolate has been conched for more than 30 hours to achieve the fine flavour.

Kind:
The Criollo-Bean is one of the finest cocoa kinds of the world, because she has very little bittern (Polyphenole) and a low acid content. The plants of this kind don´t grow in mono cultures. To protect it from sunlight it´s only cultivated in a mixed cultivation. Thus it develops very enjoyable flavours, which, depending on the kind remind of nuts, caramel, wild berries or tobaco. The crop of this cocoa plant is relatively small., because sometimes they are more unimmunized against yeast and vermins. Because of the challenging cultivation and the small crop, this Criollo Cocoas don´t have much importance on the wolrd markets. The percentage of this premium cocoas, including Criollo, is approximately 5% of the total world production.

The Trinitario is a quite new kind compared to Criollo and Forastero. It originated in the isle of Trinidad, where until 1727 they only cultivated pure Criollo. After these plantations were distroyed by a natural catastrophe, they cultivated Forastero on the same plantations. From the crossing with the remaining Criollo-trees arised a new hybrid-kind, which was called after the isle, where it originated. The Trinitario combines the strenght of the Forastero with the flavour of Criollo. Its percentage in the world production of premium chocolate is really low.

This Cuvée from Criollo and Trinitario-cocoa has a fine caramel flavour combined with a hint of matured bananas, supported by spicy notes of vanilla and malt.
